How to make it

  • For the cookie dough, combine all ingredients in a large mixing bowl and beat on low speed until well blended.
  • Divide dough into half, rolling each half into an 8x1½ inch roll.
  • Wrap each roll in saran and chill 1 hour or more.
  • When ready to bake, cut each roll into ¼ inch slices; place 2 inches apart on lightly greased cookie sheet.
  • Bake at 350 degrees for 8 to 10 minutes (they will not brown).
  • Cool completely, and remove from the cookie sheet very carefully, as the cookies will break easily – keep the spatula flat as you push it under the cookie to remove it.
  • Frost each cookie and when the frosting has set up, store cookies in a tightly covered container (I usually keep them in the freezer and take them out about 30 minutes before serving).
  • For the frosting, mix ingredients by hand or with mixer, adding enough half-and-half to make it spreadable.
  • Add a couple tablespoons of cream cheese in place of the butter if you like that flavor with your lemon.
  • Add more lemon juice or zest to suit your taste, too!
