Lemon Meltaway Cookies

I made these for a family get-together a couple years ago because there are a few members who are CRAZY about lemons. It is a variation of a recipe from Land O Lakes, a Midwestern dairy producer. Ingredients
- cookie dough: shopping list
- 1¼ cups flour shopping list
- ¾ cup butter, softened shopping list
- ½ cup cornstarch shopping list
- 1/3 cup powdered sugar shopping list
- 1 tablespoon fresh squeezed lemon juice shopping list
- 1 teaspoon grated lemon peel shopping list
- Frosting: shopping list
- ¾ cup powdered sugar shopping list
- ¼ cup butter, softened shopping list
- 1 teaspoon fresh squeezed lemon juice shopping list
- 1 teaspoon grated lemon peel shopping list
- half-and-half, enough to make frosting spreadable shopping list
- yellow food coloring, optional (it is pretty to tint the frosting a nice lemon-y color!) shopping list
How to make it
- For the cookie dough, combine all ingredients in a large mixing bowl and beat on low speed until well blended.
- Divide dough into half, rolling each half into an 8x1½ inch roll.
- Wrap each roll in saran and chill 1 hour or more.
- When ready to bake, cut each roll into ¼ inch slices; place 2 inches apart on lightly greased cookie sheet.
- Bake at 350 degrees for 8 to 10 minutes (they will not brown).
- Cool completely, and remove from the cookie sheet very carefully, as the cookies will break easily – keep the spatula flat as you push it under the cookie to remove it.
- Frost each cookie and when the frosting has set up, store cookies in a tightly covered container (I usually keep them in the freezer and take them out about 30 minutes before serving).
- For the frosting, mix ingredients by hand or with mixer, adding enough half-and-half to make it spreadable.
- Add a couple tablespoons of cream cheese in place of the butter if you like that flavor with your lemon.
- Add more lemon juice or zest to suit your taste, too!
