Lemon Roasted Potatoes

    Lemon Roasted Potatoes by Pleclare

    I was really looking forward to this recipe, it smelled so good while roasting!
    I only had 1lb of fingerling potatoes so I had to cut the recipe down to a 1/4. (It calls for 4lbs of fingerling potatoes).
    I loved the idea of tossing the potatoes in the lemon-dill dressing after it roasted, similar to a warm potato salad. However the results weren't as good as I thought it would be.
    Firstly, you roast the potatoes for 30 minutes (I only did 20 minutes since my one sheet pan was barely full). Secondly, you toss in 2 T. of dressing (I did 1/2 T. for the cut down version) and add the sliced garlic and roast for 15 more minutes ( I did 10mins). All the garlic burned terribly!
    Thirdly, once it is cooked you toss it with enough lemon-dill dressing to coat, (I didn't add any of the burnt garlic!). It looked and smelled so scrumptious, but something wasn't tasting right...the lemon tang just didn't seem to go with the potatoes? Or maybe some of the burnt garlic imposed a taste, but it didn't have an iota of garlic taste to it?
    The potatoes became soggy because of the dressing as well. However the leftover dressing was used on salad and we loved it!
    So, I think I'd rather roast the potatoes with just the lemon and olive oil next time and add the fresh dill afterwards. And for the garlic taste, just use garlic powder on the potatoes or roast it with whole, unpeeled cloves.

    Well it's a shame that the lemon dressing didn't seem to jive with the potatoes but holy smokes they look beautiful!!!! Gorgeous photo Shona. Weird that the dressing made the potatoes soggy. :(

    Thanks Janet! I know, the recipe looked really promising. Even though I cut the recipe by a 1/4, I think there might have been too much oil--roasting in oil, then extra oil with the garlic and more in the dressing which made it that soggy? Perhaps fresh off the pan before dressing would have tasted better with just a sprinkle of lemon juice and dill.

    The more I think about I think it was just too much oil, and possibly the burnt garlic imposed a bitterness to it. Perhaps I'll do a redo one of these days! :)
