Lemongrass Chicken Soup

    Lemongrass Chicken Soup W Egg Noodles
    last night for the IMI II's November Soup Challenge.

    It's a very yummy soup and I really enjoyed it. I found the recipe itself a little awkward and I'd change things up a bit making it next time just for ease and using less pots. The poster uses one pot for the stock, one pot for the lemongrass/chicken mixture, one fry pan to sear the chicken and mushrooms and then one more pot to cook the egg noodles. That's a lot of dishes.

    The recipe says to put the chicken (it calls for breast meat but I used b/s thighs), lemongrass stalks, onion and ginger together in a pot and boil for a half hour, removing the chicken breast half way through and then searing the chicken breast in a fry pan with a bit of oil after that. I figured the poster probably meant to say to add water to those first ingredients 'just to cover', so that's what I did. I'm not fond of boiling chicken in water, and I did salt the water although the recipe didn't say to do that. For ease next time, I'd just skip using the fry pan altogether and I'd just slice the raw chicken pieces and add to the chicken stock along with the enoki mushrooms and the egg noodles.

    The lemongrass, onion, ginger pot had a great aroma and once it was done I strained the water and added it to my chicken broth (home made) and pepper flakes. It made a nice stock although perhaps next time I'd use more lemongrass as I couldn't really taste it in the final product.

    I liked the addition of kimchi in this and overall the soup had a nice heat to it.

    I didn't bother with the lime slice.

    My picture isn't as pretty as the posters. I should have added my egg noodles first and then the kimchi, chicken and mushrooms on top so you could see them better. :)

    I think your picture is wonderful Janet! You definitely could cut down on the pots with some adjustments. I'm with you, I don't like the thought of boiled chicken.
