Lemony Eggs with Prosciutto

    Lemony Eggs With Prosciutto by Chuckieb

    I really loved the extra fluffiness from the 3 egg whites added, I think I'll do that for regular scrambled eggs too!
    I thought the lemon flavour was perfect, just the right amount where it didn't overwhelm the palette. And it was a perfect contrast to the richness of the prosciutto.
    I think ham, back bacon or pea meal bacon would go great too!
    My DH and daughter loved it. My son took one bite but didn't like the lemon (I think he associates lemon with desserts because he loves lemon desserts!). I liked it at first but half way through I couldn't finish it. I don't really know why, too rich for me I think? I'm not the biggest egg lover, so that might explain it!
    I think it's a great recipe to try, something different than the usual scrambled eggs! :)

    Love your photo Shona! Tickled you tried the recipe. I haven't made that in a while and I must short list it. I'm a major prosciutto fan. The lemon does certainly add a flavour. :)
