Lemony Eggs With Prosciutto

- 6 oz. thinly sliced prosciutto shopping list
- 6 extra-large eggs plus 3 egg whites shopping list
- Grated zest from 1 lemon shopping list
- 2 tbsp. fresh lemon juice shopping list
- 2 tbsp. unsalted butter shopping list
- 3 tbsp. chopped fresh chives shopping list
- salt and pepper to taste shopping list
How to make it
- Line the middle of 4 large plates with overlapping slices of prosciutto.
- Combine the eggs and whites and whisk until thoroughly mixed.
- Add the lemon zest, lemon juice and salt and pepper. Mix well.
- Melt 1 tbsp. of butter in a non-stick frying pan, add the eggs and cook, stirring constantly with a rubber spatula, until the eggs have thickened into small curds.
- Add the remaining butter in bits as you go along.
- Spoon the hot eggs onto the prosciutto.
- Garnish with chives.
- Enjoy.

This sounds SO GOOD! We are big egg eaters and I honestly don't think I have ever had lemon and eggs together, can't wait to try it!

I love the fluffiness! It has just the right amount of lemon flavour that contrasts nicely with the prosciutto. :)
