Ingredients

How to make it

  • Line the middle of 4 large plates with overlapping slices of prosciutto.
  • Combine the eggs and whites and whisk until thoroughly mixed.
  • Add the lemon zest, lemon juice and salt and pepper. Mix well.
  • Melt 1 tbsp. of butter in a non-stick frying pan, add the eggs and cook, stirring constantly with a rubber spatula, until the eggs have thickened into small curds.
  • Add the remaining butter in bits as you go along.
  • Spoon the hot eggs onto the prosciutto.
  • Garnish with chives.
  • Enjoy.

    I love the fluffiness! It has just the right amount of lemon flavour that contrasts nicely with the prosciutto. :)

    This sounds SO GOOD! We are big egg eaters and I honestly don't think I have ever had lemon and eggs together, can't wait to try it!
