Low Carb Honey Nut Cookies

    *Made for the January 2021 'Healthy' Recipe Challenge*

    Well, I managed to make even more cookies this month :-P
    So I did not use the butter and opted for the coconut oil. Usually in the past when making cookies with coconut oil the oil seems to seep out of the cookie making a mess, so I was worried. It did not in this recipe thank goodness, not sure what was different, but I'm happy! It doesn't say to chop the nuts but I'm assuming that part just got left out, so I did, and also toasted them up some. They turned out with such a great texture, nice and chewy, and perfectly sweetened! Oh and I did use coconut sugar in place of the stevia, probably about 2 1/2 Tbs. I got 9 cookies so like usual, I probably made them too big lol. So excited for these and my husband and I are both trying to eat healthier so he'll appreciate having a little sweet snack after dinner :)

    Thats great they have a nice chewy texture, some almond cookies get so crumbly or fall apart, so I am glad these worked out so well for you!
    Lol, @ another cookie recipe! You are on a roll....but at least it's healthy! ;D

    The honey definitely helps. I have a recipe for chocolate chip cookies, that are meant for ice cream sandwiches, they have maple syrup in them and they stay soft and chewy, straight from the freezer even. So, I think the texture of honey, maple syrup, agave syrup etc..would all lend that chewiness. :)
