    Manellas Mushroom Risotto

    I made this again and it was divine, I couldn't stop eating it. Such a great, simple recipe with tons of flavour. Thank you Manella!!

    Thanks everyone!! Yes, Bakerme, it can be made with brown rice. It will take longer and have a nutty flavour but it can be done.

I have a portion left over. 3/4 cup of arborio rice would serve three people as a side dish. But I'm happy for the leftovers. :) Tried two new recipes for dinner last night, this one, and then a Braised Duck with a red wine sauce. The duck was a dud, the risotto a hit. :) I used my home made chicken broth, the instructions were clear and easy to follow and the cook time spot on. On Bren's advice I still used about 4 cups of broth for the 3/4 cup of rice and it was perfect. Thanks Bren for bringing this recipe to my attention. Thanks Manella for posting it!
    Michelle, I would think you could change out the mushrooms (since your family doesn't care for them) with asparagus. You'd get a different flavour somewhat but I think you'd love this recipe.
