Moist Applesauce Health Muffins

    Moist Applesauce Health Muffins by Rosemaryblue

    A great little muffin. It has a perfect, spongy, moist texture yet it's still light and airy. You can taste the apple from the applesauce and the hint of cinnamon and nutmeg is perfect.
    The only sugar comes from a 1/4 cup honey. I used maple syrup which has a similar sugar content. And only 2 Tablespoons of oil, making it low fat. It also uses half whole wheat flour, and I think you could add a little bit ground flax if you want to bump up the fiber and add some healthy omega fats.
    I didn't have raisins, so I used the last of my dried cranberries. I like that tart bite of the cranberries but I could see Thompson or Sultana raisins working well. They are very filling and satisfying, perfect for breakfast.
    The baking time and temperature was also spot on. A great healthy recipe that is also great tasting! :)

    Nice muffins Shona! They definitely do look like they have a soft airy texture. Lol, too bad my kids love the "cupcake" muffins, especially if they have chocolate chips in them :-P I may try these and see if they will go for it :)

    Thanks Michelle! My son liked them and ate them for breakfast. But he's more of a health buff these days. My daughter wasn't very impressed, but ate one or two. She would have been more enthused if there were chocolate chips in them, or even fresh/frozen blueberries. I think these would be a perfect vehicle for blueberries! I may just try that next time. :)

    Finally got around to making these with blueberries! And they are good that way, the kids definitely liked it better. I used frozen wild blueberries (the little tiny ones) and just under 1 cup's worth. But next time I will use a heaping cup.
    I didn't quite have enough applesauce, so I subbed with yogurt (1/2 cup worth) and it worked out perfect, still a light, airy muffin.
    I think you could use any fruit puree, think peach with pecans, or banana with choco-chips. The muffin base is great and would work with so many options. :)
