    Recipe: My Moms Rouladen Beef Roll

    October came and went so fast that I didn’t get a chance to make any of our favorite Oktoberfest foods. Today was a make-up day. This is a classic “authentic” German rouladen. Rouladen is typically round steak pounded thin, layered with S&P, mustard, bacon and dill pickles, then rolled up and cooked in broth. Instead of using beef, today I went with venison. My sister made the dill pickles with cucumbers from my garden making this an extra special meal. Things were going really well. I got them all rolled up and tied with string and then realized I forget to the dill pickles. So I had to cut the strings and start over.

    Once the meat is cooked, I always play with the broth. Usually adding juice from the pickle jar, mustard, bay leaves, and other seasonings to make a rich brown gravy. Then serve over spaetzle. Typically, I will make the spaetzle from scratch, but today I used a package of store bought. (Note to self, don’t do that again! lol!) German red cabbage is also a traditional side with this dish.

    Thank you, LindaLMT! You're right about having to get it right. Tonight's was probably the best I've ever made as far as it being moist and tender. Hubby ate 3! That doesn't always happen when I use round steak.

    I too have never tried Rouladen, I bet it's delicious though, wonder if my husband would go for it?! Never had Spaetzle either :)

    This is exactly how I was taught to make it too, except I cook the bacon before adding it to the rolls. DH's family is from the Bavarian region (Selbitz and Hof), and his grandparents are from Baden-Wurttemburg and they never ate spaetzle with roulade; always potato dumplings....it was highly insisted upon that it would be served with potato dumplings! Perhaps it's more of a Swabian thing ;)

    Thank you, Cosmicmother! I used to be the same way. Always made potato dumplings to serve with rouladen. Several years ago I had an Oktoberfest party and a friend brought homemade spaetzle. I've been hooked every since! She made the spaetzle to go with jaegerschnitzel, but I liked it better with the rouladen gravy so now I have to have it every time I make rouladen.

    No, it's not sour at all. Think of a roast beef sandwich with mustard and pickles.
    You also serve the roulade's with a beef gravy, just as you would a roast. It's delicious! :)
