Nova Scotia Oat Cakes

    I DID MY OWN TAKE on these “Nova Scotia Oat Cakes” because: (i) I am lazy; (ii) I had forgotten I had given away my rolling pin years ago; and (iii) I didn't have any brown sugar. IN SHORT, I DID NOT FOLLOW THE RECIPE; HOWEVER, I WAS DETERMINED TO MAKE THESE FOR ST.PATRICK'S DAY! I mixed all the ingredients except oats (mixed in by hand) in my food processor and subbed maple syrup for brown sugar without reducing the water (on purpose) thinking I would just add a few more oats (it ended up being an additional 1.5 cups of oats - not the same recipe at all). I also used whole-wheat flour. I portioned the cookies in my "meat baller scoop" and flattened them with a fork (instead of rolling the dough and cutting it). I am VERY HAPPY with the flavor (not sweet) and texture of my end result and think I would be inclined to make these biscuits my own way again (except I would try lard instead of shortening since I usually prefer it for baking).     I DID NOT POST MY PHOTO WITH THE RECIPE OR POST A LINK TO MY IMI II REVIEW SINCE I DID NOT FOLLOW THE RECIPE CLOSE ENOUGH TO SAY IT IS THE SAME RECIPE (AND MY VERSION IS FAR LESS ATTRACTIVE). REGARDLESS, I THINK THE ACTUAL RECIPE WOULD BE WORTH TRYING.

    I don't think I've tried oat cakes before. I like your idea of Maple syrup instead of brown sugar, and you ended up with something good-- so it's a winner! :D

    I like your picture MrsJ! I am a huge fan of this type of oat cake but each time I make them I have different results even using the same recipe. I'll have to try this one sometime. I like your idea of scooping and flattening instead of rolling which can be a bear to do without them sticking or trying to get a clean cut thru oats.

I really did have the intention to roll them out: I have hardly baked in years and simply had forgotten I had given my rolling pin to my cousin. Interesting that you would have different results using the same recipe.

    Well you know Chuckieb, they are a lot like a biscuit (not too sweet) and kind of "plain oats." I quite like them! :)
