Oven Baked Panko Chicken

    Oven Fried Panko Chicken

    I've been making this recipe at least monthly ever since I came across it 7 years ago!!! It was posted by a wonderful woman named Pat LeClare who used to be a major participant in Group Recipes and the ODD page. Miss her lots.

    I have reviewed this recipe previously in the old IMI Group but I'm going to do it again in this group. I now make this with Boneless, Skinless Chicken thighs. I always make four, two each for hubby and I. I only need about a half cup of panko and 1/3 cup of butter (I use margarine).

    Pat forgot to list the salt and pepper in her ingredient list but I add those as well as the cayenne to the bread crumb mixture.

    I cook it at 375F, not 450F. It's a simple, quick, yummy recipe. The chicken turns out crispy and yummy. Try it, you'll love it. :)

    In this recipe one can use salted butter in the place of unsalted butter and reduce the salt in the recipe by 1/4 tsp.

    Very nice photos, Chuckie! These look really good! I've discovered that Panko breads crumbs are the best type of crumbs to use if you want a crispy coating. I saved the recipe!
