Ingredients
  • 2 c panko (Japanese bread crumbs)
  • 1/2 tsp cayenne
  • 1 stick unsalted butter,softened
  • 1 chicken (about 3-1/2 lbs) rinsed,patted dry and cut in 10 serving pieces(breasts cut crosswise in half)

Directions
  1. Preheat oven to 450 degrees with rack in middle.
  2. Stir together panko,cayenne,1/2 tsp salt and 1/4 tsp pepper in pie plate.
  3. Stir together butter,1/2 tsp salt,and 1/4 tsp pepper in small bowl and brush all over chicken. Add chicken,2 pieces at a time to crumb mixture and coat evenly on both sides,pressing chicken into crumbe to help them adhere,then transfer,skin side up to shallow baking pan.
  4. Bake chicken until well browned and cooked through,30 to 40 mins. Let stand uncovered,5 to 10 mins. to crisp.

I love this recipe. When I am trying to be good, I use spray butter, However, there is nothing like REAL butter!

Love panko and I usually make mine in about the same way but with sage and rosemary flavored olive oil. Either way they do come out great and no frying.


This sounds really good, but I don't know about no panko. I have cut up a large squirrel and coated the pieces in Ritz cracker crumbs and baked in that way. It is good as long as you get all the fur off.

I like to use panko , too. Never heard of it till about a year ago!
