Oven Fried Panko Chicken

- 2 c panko (Japanese bread crumbs) shopping list
- 1/2 tsp cayenne shopping list
- 1 stick unsalted butter,softened shopping list
- 1 chicken (about 3-1/2 lbs) rinsed,patted dry and cut in 10 serving pieces(breasts cut crosswise in half) shopping list
How to make it
- Preheat oven to 450 degrees with rack in middle.
- Stir together panko,cayenne,1/2 tsp salt and 1/4 tsp pepper in pie plate.
- Stir together butter,1/2 tsp salt,and 1/4 tsp pepper in small bowl and brush all over chicken. Add chicken,2 pieces at a time to crumb mixture and coat evenly on both sides,pressing chicken into crumbe to help them adhere,then transfer,skin side up to shallow baking pan.
- Bake chicken until well browned and cooked through,30 to 40 mins. Let stand uncovered,5 to 10 mins. to crisp.

Love panko and I usually make mine in about the same way but with sage and rosemary flavored olive oil. Either way they do come out great and no frying.

Again, a lovely looking recipe. I much prefer to 'oven-fry' my chicken as opposed to the old deep-fryer method.
