How to make it

  • Preheat oven to 450 degrees with rack in middle.
  • Stir together panko,cayenne,1/2 tsp salt and 1/4 tsp pepper in pie plate.
  • Stir together butter,1/2 tsp salt,and 1/4 tsp pepper in small bowl and brush all over chicken. Add chicken,2 pieces at a time to crumb mixture and coat evenly on both sides,pressing chicken into crumbe to help them adhere,then transfer,skin side up to shallow baking pan.
  • Bake chicken until well browned and cooked through,30 to 40 mins. Let stand uncovered,5 to 10 mins. to crisp.

    Very crunchy and moist and just enough heat for me. I put foil on the baking sheet and sprayed it with Pam for easy clean-up. Added a picture, too. and some more in the IMI thread linked below.

    Pleclare, I wish you were still here so I could tell you how good this was. I did add garlic powder and doubled up on the cayenne. I LOVED its crunchiness.     Again, a lovely looking recipe. I much prefer to 'oven-fry' my chicken as opposed to the old deep-fryer method.

    This sounds really good, but I don't know about no panko. I have cut up a large squirrel and coated the pieces in Ritz cracker crumbs and baked in that way. It is good as long as you get all the fur off.

    Love panko and I usually make mine in about the same way but with sage and rosemary flavored olive oil. Either way they do come out great and no frying.
