Painkillers!

    Totally up for the December Recipe Challenge "Holiday Beverages" I decided to make
    Pain Killer/saved
    Seven years ago Hubby and I went on our first cruise to the Caribbean. I had an acquaintance at the time who told me that we HAD to order a "Painkiller" on the Island of Tortola ,as it was their signature island drink, and so we did. It was most enjoyable. Upon searching Group Recipes for a Holiday beverage I came across this recipe and thought it'd be fun to recreate that concoction.

    It tastes spot on and is most delicious. It is also very potent, thus the 'painkiller' designation I guess. :) I used a small can of Coconut Milk and tried to whisk the 'lumps' out but wasn't totally successful. It was still delicious nonetheless.

    You could actually serve two people with that recipe. I barely had room for one ice cube in the glass, and it's a big glass.

    This sounds like my kind of cocktail, and I love the name!! I know what you mean about the lumps in coconut milk, they are almost impossible to get out, unless you heat it up. Great picture, pretty glasses!

    Great photo, chuckieb! I love tropical drinks and this is right up my alley. Can't say I've ever heard of a "painkiller," but I can see why. That's a huge drink! Many of my favorite drinks are made with cream of coconut, but most are blended so you don't notice the lumps. If you didn't want open a can for just an ounce or two, you can use coconut flavored rum. Should taste pretty close. Glad you found your favorite drink that brought back fond memories.

    Thanks Michelle! Thanks DIZ3. I was wondering if I'd put the coconut milk in the blender first if it would have taken care of those lumps. I used just a mini can of coconut milk and it was nice in that it made the drink look/taste creamy. I don't know that coconut flavoured rum would do that? (Have never had coconut rum before).

    Is the cream of coconut just the thick cream you get from the top of a can of coconut milk? I thought they were different things, but have no idea really!

    Coconut rum comes in a white bottle, brand name Malibu. There's another rum in a white bottle that tastes like a cinnamon bun, brand name Chata.

    I'm actually not sure Shona. All I did was shake a mini tin of coconut milk really well and use that. It tasted good so......:)

    I've seen that Rum Chata in the store Points but never had it.

    One of my favorite rum drinks! I first had one in Annapolis, Maryland made with Pussers navy spiced rum (Annapolis is a big navy town). Nice find and great picture!

    Cream of coconut (at least the kind used to make drinks) is a thick sweet coconut flavored syrup. The consistency is like chocolate syrup in the can when the chocolate syrup is cold.

    Very fun Linda! The bar in Tortola also uses the Pusser's rum. :) I don't think I've ever seen cream of coconut in the stores but I'll have to watch for it. :)
