Pancakes from Scratch

    Pancakes From Scratch
    for myself for breakfast on the weekend. I added blueberries to the mix. I halved the recipe and used skim milk. My pancakes were heavy and not fluffy. They tasted fine, although I`ve seen people mention adding vanilla and I think that would have made them even nicer. Joce suggested I check the expiry date on my baking soda. I can`t decipher it but I looked online and it said to test it by adding a 1/2 tsp. to a cup of hot water and if it was still good it would fizz. Mine did not fizz so I shall head to the grocery store when our snowstorm is over and try the recipe out again.

    Once opened unless it's hermetically sealed afterward or you use it a lot it will adsorb humidity from its surroundings and deactivate its rising power.
    Two heaping tablespoons IMHO seems like a lot for this recipe.

    I'm perplexed by the recipes name. How in the world does one NOT make pancakes from scratch?

    Oops sorry. Yes Points, I meant baking powder. You can buy a pancake mix at the grocery store to which I think you just add milk and water.

    Too bad your baking powder had expired. That's happened to me before too, it took a couple batches of bad muffins before I realized it! Hopefully they turn out fluffy next time! :)

    Do you know the directions on a can of Baking Powder note to shake it. I can't fathom shaking a can of compacted BP but I do try and stir it up when I open a can.

    Lol Linda, I had NO idea that you were supposed to shake a can of baking powder, I have never done that!
