Parmesan chicken

    I had to scale down the amount of oregano in this recipe. I used 1 teaspoon instead of 1/4 cup. I also used 3 tablespoons of butter instead of 3/4 cup. I thought that was way too much oregano and butter. I used 4 chicken breasts. I cut through the thickest portion of the breast so it will be even and lay flat. I added 1 more clove of garlic, minced. All other ingredients I used amount stated. I coated each breast in the garlic butter then in the breading. I shook off excess. Sprayed casserole dish with Pam and layed breasts down. I only had to bake for 40 min on 350 degrees. It was good. I served it on top of spaghetti noodles and had garlic spaghetti sauce on top of the chicken.

    Wow, 1/4 cup of oregano! I would have scaled it down too...I love fresh oregano but with dried I have to take it easy as it's very strong tasting to me. This looks really good though and that is a nice short ingredient list for chicken parm. :)

    That looks super yummy, Cheryl, but waaaay too much oregano. My tried and true recipe makes 2 servings and it only calls for 1/2 tsp. oregano. Was the chicken nicely browned with a slight crunch to the topping at the end of baking?

    I like the sounds of this dish. Yum on the garlic and the parm. The recipe says it serves 6 people and calls for 3-4 lbs. of chicken parts so 1/4 cup oregano and 3/4 cup butter might be about the right amount if you were making that much. Sounds very yummy served on top of spaghetti with garlic spaghetti sauce. NOM.

    Love chicken parmesan. One of hubby's favorite meals. Glad you were able to make adjustments and have it turn out. That is a lot of oregano! Based on the salt and pepper amounts, I wonder if they meant 1/4 teaspoon and accidentally typed in cup.

    Lol, I'm sure the 1/4 cup of oregano should have been 1/4 tsp since it's ground oregano ;) I've made that recipe mistake before saying cups instead of tsp but I usually catch it pretty quick!
    This does sound good though, especially with the spaghetti, yum! :)
