Peanut Butter-Chocolate Freezer Candy

    Peanut Butter Chocolate Freezer Candy

I just couldn't help myself and made these today. I had them saved from February's challenge but couldn't eat any more treats then but can now.
My review: An all-in-one chocolaty peanut butter cup but so much healthier. Delicious and so easy to make. I have a shallow candy tray and used that. Do freeze, keeping in the refrigerator is not cold enough. They melt quickly once in your mouth. Thanks Hungryjohn!!

Linda - I always feel inspired by your choices! Honestly, I would make them myself after your reviews and beautiful photos if I didn't already consume so much nut butter already (a tradition I started with my dad when I sat on his knee to watch "Hockey Night in Canada" while eating peanut butter off a spoon during my childhood). When I used to have a ton of allergies (only milk now), sometimes nut butter was the only thing I had around to eat. If I weren't already "nut-buttered-out," I would definitely make these! Beautiful pic! :)

Thank you MrsJ and Shona. I'm finding the only "healthy" candy-type treats are those in the chocolate peanut butter category. Sometimes coconut based. I can't complain though if it keeps me on the right track. I don't over-do-it and always make half or less of the recipe.

Wow, these look so yummy!!! My daughter would like the peanut butter version but I wonder if I could make half with almond butter for myself? It would be a good experiment :)

I don't see why they can't be made with almond butter Michelle.

Well don't those look scrumptious and professional Linda! Very nice! I like your chocolate mold. I used to have tons of molds when Jim and I were first married as I used to make a lot of homemade chocolates mainly using those chocolate discs you can buy at Bulk Barn. I had a lot of fun with them. I still have them down in a tote in the basement but I wonder if they're so old they might crack if I used them now. :) I had a mold that was shaped like peanuts in the shell and I used to coat the mold with milk chocolate then fill the cavity with peanut butter and then put a final layer of milk chocolate over the top (which was really the bottom) to seal them. They were awesome!

Thanks Janet and DIZ! These really are ideal to have in the freezer for those "I want something" moments and not be consumed by guilt or ruin a good healthy eating plan.
