I had wanted to make this for August's IMI2 challenge but just didn't get around to it until now.

My review: OMG!! One of the best recipes I've made on this site! Perfect balance of ingredients and bursting with flavor. I opted to use chopped unsalted dry roasted peanuts instead of pine nuts and because I adore ginger I measured heavy with it. Even though I used organic ground turkey which was fabulous I know using ground chicken would be equally as delicious.
If you are craving lettuce cups this is an easy to make, fantastic recipe.

That looks amazing Linda and I'd like to try this recipe. I'm all for easy and fantastic! Peanuts make a lot more sense to me in this recipe than pine nuts do. Did you use water chestnuts? I'm not a big fan of them but I'm sure it'd be good without them too.

If I had them I would have used them but I didn't have any and to me the recipe was delicious enough without them. All they really do is add some crunchy texture.
