    This is a perfect little ginger-snap cookie! Very delicious and addicting!
    The kids even loved them, which is a bonus because I thought my husband and I would be left with 30 cookies to eat, Lol ;) It has a nice peppery finish on the palette but it's not over powering.
    The cookies taste crisp and peppery on the first day of baking, but after a few days the spice mellows a bit and becomes more rounded in flavor. The cookies also become more tender as it sits. My MIL swears that you should let them sit two weeks before eating, we'll see if they last that long! (My husband said his Mom always wrapped these cookies and put them in their stockings. :)
    My MIL uses honey in her Pfeffernüsse instead of molasses, but I might try it with Maple syrup as I think that would be a good in-between. And I'd also like to try a lemon glaze instead of the powdered sugar as I just love citrus with gingerbread spices.
    A delicious cookie that is perfect for Christmas time!

Letting them sit reminds me of the holiday cookies my mother would make. Cookies that made large 7 and 8 dozen batches. She would store in metal cookie tins and they lasted for 4 - 6 weeks. They never got stale. Can you imagine what people would say today about eating something that old that has not been refrigerated or frozen? lol!

    My mother and aunts too would make cookies and store them in tins and keep them out on the non-heated porches DIZ. The porch was cool enough and they always tasted great even a few weeks later.

    Diz, yes, some cookies are far better aged! My Mom always makes her shortbread a few weeks before Christmas and stores them in tins in the fridge. They really do taste better after a week or so. :)
    That's neat Linda! Right now our porch is -20C/-5F, so it would be frozen cookies, Lol! ;)
