    Recipe by Twill10: Pork Ribs In Mango Sauce
    A good flavored rib but had to fight with the bone to give up the meat. Put it back in the oven, this time covered with foil since I already had applied the mango sauce, and baked the ribs for another hour to get the meat to come loose from the bone easily.

    In my experience with ribs, one hour is not enough time to get the ribs tender, but I do them at a lower temp. for longer so who knows?! Looks great though, love the sound of the mango sauce!!

I'm positive it's because I can't get good quality mangos in the stores. Like Mommyluvs2cook, I cook ribs at a lower temperature and for a longer time, so I don't pay much attention to recipe cook times. I've been on a quest to make perfect ribs. What I've discovered is that they are best if you can get the internal temp between 195 and 205. They will still be firm enough to cut and pick up with your fingers, but the meat will be tender and easily come off the bone.
