Pork Ribs in Mango Sauce

    Pork Ribs In Mango Sauce by Twill10

    This was good, the guys said it was awesome and they loved the "BBQ" sauce, aka mango sauce. They had no idea it was mango sauce! ;)
    I differed slightly in the cooking method, rather than bake at 350F for one hour I did 325F for 1-1/2 hrs --I added some water to the pan and placed the ribs on a roasting rack, and covered tightly with foil. Then uncovered, raised the heat to 350F and baked for a few minutes to dry off the top of the ribs, basted with the mango sauce and continued to cook. After 5 minutes it didn't look like the sauce was melting or bubbling over the ribs, so I decided to broil them, after 5 minutes of that nothing happened so I removed the ribs. What I found was that the mango in the sauce was gelling and turning into fruit leather! Whoops, LOL! Perhaps I cooked the sauce down a little too much on the stove, or baked it for too long? Maybe the sauce just needed a little water? But in any event it was still tasty!
    I see Points had similar results in his photo here: Pork Ribs In Mango Sauce, both our photo's look nothing like the recipe photo!
    Twill said to season the ribs with salt or adobo before baking, I chose adobo seasoning (garlic, onion powder, paprika, cumin, chili powder, s&p). I think without that extra seasoning it might need a little more zip or zing in the mango sauce.
    Not the most appetizing photo but I had to take a quick pic before the boys devoured them!

    I think your photo is great Shona! Glad the boys enjoyed them so much and funny that they didn't know they were eating mango. I like ribs that are cooked low and slow, just about all day. 1 hour is not nearly long enough for fall apart tender.

So we stopped at the store and that's what we are having for dinner tonight. This recipe looks really good. I would also change the cook time. I've tried to master cooking the perfect rack of ribs. What I've learned is this: The perfect rib depends on how you like your ribs. I want to be able to pick up a rib with my hands and have the meat easily pull from the bone when I bite into it. My sister, on the other hand, wants the meat to literally fall off the bones so you have to eat it with a fork. My brother likes tough, chewy ribs that you have to work at. Cook times can widely vary depending on the desired outcome. I cook mine at 250F until the internal temp reaches between 205F - 210F.
