Pumpkin Spice Cookies

    For the IMI Recipe Challenge, "Pumpkin" category :)

    These are one of the best soft cookies I've ever made! The texture is like a dense, chewy scone yet it is light as air like a sponge cake! The spice amount is just perfect for me. I thought the kids wouldn't like it, but they loved it too! I should have used my cookie scoop to get even portions, but even by dropping the batter on the cookie sheets with uneven sizes I still got exactly 24 cookies. They baked up in 15 minutes and were chewy-soft.
    I like the vanilla glaze, but next time I might try a spiced glaze or add some orange zest. The recipe as written is excellent though!!

I just asked on your other post what you had for dessert after your Thanksgiving feast and now I know (shoulda read this post first ;)). The snow makes a nice backdrop for your photo, but I'm not ready for the white stuff :p

    They look fantastic!!! I think your scooping without the cookie scoop went well, looks even to me! My kids requested pumpkin cookies while I was making pumpkin bars (which I promise will be reviewed tomorrow or Monday) so these will probably go on my pumpkin list :) :) Great photo!!!

    Awesome photo, Cosmicmother! Just seeing the snow made me cold. Had to run get another cup of coffee so I could warm up and image how delicious those cookies would taste with my coffee. Love pumpkin cookies! Yours look so beautiful! Mine always fall flat. I think I will give this recipe a try this year.

    Made these today, Nov 10th/2017. I made them last year about 3 times because they were such a hit with the whole family. This time around I used my 1.5 Tbsp. cookie scoop and got 36 cookies. (The recipe says 60, but even if you used a 1 T. measure you might only get 54 tea size cookies.) The 1.5 T scoop gives you a nice palm size cookie! Using the two spoon method I always got 24 large cookies.
    The dough seemed much more sticky than I remembered, so with a wet finger I flattened and rounded the cookie slightly as they don't change their shape much in the oven. I have a new oven from last time I made them and again it only took 15 minutes to bake.
    This time I use 2.5 tsp.'s of homemade pumpkin pie spice for all the spices called for, and did not add any butter to the glaze. It's even more delicious than I remembered! I just had to hide them on my daughter as she polished off 5 cookies in one sitting, LOL! But they are a bit smaller than last time I made them! ;)
    They are absolutely delicious! A perfect cookie to bring for Thanksgiving or make for a Christmas Cookie Exchange! :)

    I saved the recipe when you first posted it, Cosmicmom, then deleted it when I was cleaning out my recipe box, but saved it again now because they look so good. My list of 'to try' recipes just keeps getting longer and longer!

    Made these also for Caiden's Christmas party and they were gobbled up! I kept half at home for the family and they are already gone, someone must have been sneaking them lol. The icing part of the recipe made as is would have been super thick, so I thinned it down some and wish I would have done more, because I would have liked it to have more of the drip effect like Shona's cookies. Next time!! Delicious cookies!

    Oh, and I didn't add the butter to the glaze, just the liquid until I got a thin drizzle icing.

    Linda, they are chewy... yet soft. It's hard to explain! They are not cake like, more of a dense crumb yet light as air. I wish I could send you a cookie to try! ;)

    I made these again the other day and did an orange glaze. Used a clementine orange, and added the juice and zest to the powdered sugar, delish! :)

    Made these favorites again with some pumpkin puree I froze in freezer jam jars. I was browsing recipes on a food blog when I noticed a pumpkin cookie with maple glaze, intrigued, I clicked on it and noticed the cookie looked just like this one! The only difference was that cookie used half brown sugar, half white. So I thought I'd try it that way, and the glaze was exactly the same except it used a tsp of maple extract. Oh my heavens, the glaze smelled good! Just like a maple frosted donut, yum! The cookie was a little more dense and chewy, and that little bit of molasses in the sugar really brings out the spices. I think I will make it that way for now on! (The type of brown sugar I use is halfway between golden/light and dark brown sugar. It's a Demerara sugar but with soft, smaller crystals vs turbinado).
    We all loved the maple icing! A new favorite for sure. But I've really liked all the glazes I've tried, vanilla, orange, lemon, pumpkin spiced, and chai. You can't go wrong! ;)
