Quinoa Veggie Pilaf

    I made this for lunch yesterday, a quick and easy recipe. I did not have any bell peppers so i added mixed vegetables. I did use chicken broth. I also added some bacon:) I couldn’t resist.
    What I did is after I rinsed the Quinoa I toasted it in a bit on olive oil first before adding it to the broth. I find toasting it brings out a nutty flavor which I like.

    I've only made quinoa once or twice and haven't liked it. Not sure why? perhaps the texture.... I do love other grains like farro, freekeh or bulgur. ..just haven't found the love for quinoa yet... lol ;)

    I fix it just like rice. 1 cup quinoa with 2 cups water yields 3 cups of simmered quinoa on low for 30 minutes for soft quinoa with all the water gone. 1+2=3. Don't believe I've roasted it for a more nutty flavor though.

    Thank you Shona. The first couple of times i made Quinoa I did not care for it. I find that if you toast it first, cook it in broth and then add it to the pan you cook the veggies in it picks up the flavor of all. It is a required taste for sure:)))
