    Reuben Sandwich
    Recipe made for IMI2's May 2020 "Picture-less" recipe challenge.

    My review: Nothing like a homemade Reuben, so good! I like mine 'open faced' so I eat less bread. I baked mine in the toaster oven for about 12 minutes or so on 375(f) until it was warm and the cheese was melted.

    Made homemade corned beef using Mauigirl's recipe posted on Allrecipes.
    Used Smoky Thousand Island Dressing for the dressing.

    Funny, my Dh and I were talking about Rueben sandwiches last week! How we'd love to go "out" for lunch and get a good sandwich-- I never thought to make one at home! So I will have to give it a go. I love that you used homemade corned beef and thousand Island dressing too, Yum!

    It sounds wonderful! I am SO craving Corned beef now. :) You are so disciplined! Part of my enjoyment of a Reuben is the grilled bread (on both sides. LOL). Great sandwich Linda!

    When you make your own Points you can make them so much more healthier. One slice of bread toasted and then oven bake an open faced sandwich, lower fat cheese or not as much, lower fat dressing if you make you own using lowfat mayo. You can still make a great Reuben. :)
