Rhubarb Pudding Cake

    I LOVE Rhubarb and was craving a spring time dessert and came across
    Rhubarb Pudding Cake
    It was quite good. You basically layer the fruit on the bottom of a cake pan and then pour a thin batter over top and then....you pour 2/3 cup of boiling water on the top which is what makes a type of custard on the bottom once cooked.

    It has a lot of sugar in it, 1 3/4 cups and if I were to make it again I think I'd increase the rhubarb to at least 2 1/2 cups if not 3. (I am a Rhubarb Monster though!)

    I served some up at Coffee break this morning and am bringing half of it over to some friends for a treat. Diz made this before and hers is quite 'saucy' on the bottom where my custard is quite gelled. Not sure what I did. :)

    A fun cake and nice for spring!

    My rhubarb just poked out of the ground a week ago, just baby leaves right now and hopefully I can harvest some stalks in a few weeks! I'm sure I saved this already but I'll bookmark again so it's on my 1st page--I must try soon!! :D

    It is rather reminiscent of a cobbler Linda. Good description. If you were to sub a fruit I'd think you'd prefer to use a tart one OR, tame down the sugar content.

    I've never made anything with rhubarb either Michelle. I remember stealing some out of the neighbor's garden when we were children and eating some raw stalks … that's my only experience with it.

    Would sure like to make this. But I'm sure my flour has gone rancid. And the baking powder is flat too. Been to long since I've baked anything. I'm tearing up a rose garden strip along the front of my property. Going to put in some red flowering in the spring and fall bushes. Might as well start some rhubarb in between the bushes.

    Good to see you Points. My baking powder needs replacing as well. Enjoy your garden work. I do have rhubarb growing but it's never really 'caught'. I've tried it in numerous spots in the yard. Most people seem to get it going no problemo, but alas....Luckily it's readily available in our grocery stores and farm markets.
