    Roast Chicken With Meyer Lemon And Sage
    for dinner last night. I adore Meyer Lemons.

    I'm afraid I wasn't super keen on how it turned out. It was fine. Hubby said he liked the flavours, but personally I don't think that I'd make it again. (Sorry Pat) :(

    I didn't cook it at 425F. I backed it back to 375F and it cooked for two hours. My fault I'm sure as it probably wasn't thawed completely. I tried really hard not to tear the skin when I was pushing the butter, lemon slices and sage under the skin but that's a lot of stuff! LOL. :) So the skin did split at the front. I used 4 tbsp. of butter instead of 6 and it looked like plenty.

    I didn't add the carrots and onions on the bottom of the pan as I had a huge veggie tray already made up and the chicken sits up on a rack anyway.

    I could taste a bit of the lemon and the sage on the surface and the skin of the chicken but the flavour didn't permeate. If you wanted just a plain roast chicken, or a chicken to cook up to turn into another dish this would be a good recipe.. But I do prefer recipes with a rub or a sauce to accompany them and to give them more flavour.

    That's too bad the flavor wasn't there :( I think rubs, especially under the skin, yield the best tasting chicken meat. But your right, this would be great if you were chopping it all up and using it in something else! Your picture looks so great though, even with the torn skin :)

    I'm surprised it wasn't that flavorful, I make my chicken like that all the time except I usually use rosemary, or thyme instead of sage. The lemon/herb drippings roasted with the onion and carrot makes for a delicious veloute pan sauce! Some garlic would be a great addition ;)

    And yes Shona, perhaps I should have done the carrot onion thing and created a sauce and that would have made all the difference.

    I think it looks good! Looks very moist! I don't care for lemon, so I would have been fine without a strong lemon taste. Glad you enjoyed your sandwich. Maybe better leftover.
