Roasted Beet And Goat Cheese Salad

My review: Wonderful combination of ingredients. Simple but delicious! I used walnuts instead of pine nuts only because I didn't have pine nuts.

That looks really nice and we'd both enjoy that. I think the walnuts might actually go even better with the beets than pine nuts just because they are kind of 'earthy' too. :) Lovely photo Linda!

My mom ruined it for me with her pickled beets and I've tried roasted beets since but I still can't eat it. The goat cheese and walnuts make it tempting though, I might have to try it again one day! ;)
