Shortbread Bars

    Shortbread Bars by Tuilelaith

    These are awesome! Rich, buttery flavour, just like a shortbread should be. And baking it into bars instead of cookies just makes it so much easier, especially if your making other types of cookies over the holidays.
    I used salted butter, but I also added a sprinkle of sea salt and it was perfect. Once the dough was made, it didn't seem like there would be enough to press into my 16x12" cookie sheet. I like shortbread to have a bit of chew to them and didn't want a thin crispy shortbread. So I pressed it into a 13x9" casserole dish, and baked a little longer than called for (around 20-25 minutes). I also liked that the glass casserole dish allowed me to see the bottom of the bars to know when they were done. The bars turned out to be 1/2" thick in the 13x9" pan.
    I let them age for 3 days before bringing them out of hiding, lol, I find they taste so much better after aging. But I must admit to sneaking a couple in that time and it was still delicious! ;)

    Great photo, Cosmicmother! I saw that recipe when it was posted and liked its simplicity. Glad to know they turned out perfect. Going to put this on my "need to try" list. Thank you for the tip about letting them age for a couple of days.

    It was a little different than my Grandma's cookie recipe that I make every year, richer and more buttery-- kind of like Scottish shortbread. This is just too easy, I could see making it more often during the holidays. It was very good and sturdy enough to be dunked in Hot Cocoa! :)

    Michelle, they are softer in the middle yet crisp on the outside and melt in your mouth, but sturdy because they are so thick. Mine were just crisp half way through and had a soft line right in the middle. If you like them drier than bake a few minutes longer or until the tops start to go lightly brown. I like it when the tops are still white and just the edges are beginning to brown.
    The bars have something for everyone, the outside pieces are drier and crisper and the inside pieces are softer. And all of them delicious! :)
