Simple Cucumber Dip

    Simple Cucumber Dill Dip by Smokeyjosephine

    Such a delicious dip or spread! I was worried that it might have too much mayo and was tempted to mix it with half yogurt or sour cream. But, to stay true to the recipe and follow my hunch I decided to try it 3 ways. I divided the recipe in half, making one with all mayo, and one all sour cream. Then I took half of each and mixed them together. So I ended up with 3 dips. The all mayo version was the winner over the all sour cream version. However, I could see the all sour cream one working as a dip for potato chips--it reminded me of the Philly brand dill pickle dip!
    The all mayo one was the winner with the family as a spread/dip with crackers and they couldn't tell the difference with the half mayo/sour cream mix vs all mayo. But I preferred the half mixture with fresh veggies as it was lighter.
    I served the original recipe's mayo version on Rye crisps and put smoked salmon on some for my DH and DS. Then used leftovers as a spread on tortilla wraps with smoked turkey and smoked salmon. This would also be great with other seafood like crab, shrimp or tuna either mixed into the dip or topped on crackers, pita crisps, toasted bagels or blini.
    I added more dill than mentioned, 2 T of fresh dill vs 2 tsp's, and could even add more. And for the salmon topped crackers I added some horseradish instead of a dash of hot sauce. I found it didn't need any salt as the mayo has plenty (recipe doesn't call for it), but if you used all sour cream or yogurt then you may want to add some; also with the all sour cream/yogurt version you'd want to lower the amount of lemon juice as it might be too tangy for you.
    After all that, the dip as written is wonderful and you really don't have to change a thing! Maybe just adjust the amount of dill and/or hot sauce to your liking!

    Great suggestion Linda! Now that you mention it, any type of fish/seafood cake would be great too, or poultry burgers. It reminds me of Tartar sauce and would be fantastic with a few capers in it. Served as a dip for crispy coated cod and fried potatoes--yum! So many possibilities. :D

    Sounds like you has fun trying this different ways Shona! I can see how one way would work better with some things and another with others. Sounds so fresh and I think this would make the perfect dip for company with an array of veggies and crackers :)
