Simple Cucumber Dill Dip

This is a dip I've had in my collection for a few years now, and it always pleases my guests. Fairly easy to prepare, it is best with table water crackers, melba rounds or even a vegetable tray.
Ingredients
- 1 8 oz package cream cheese shopping list
- 1 cup mayonnaise shopping list
- 2 medium cucumbers, peeled, seeded and finely diced shopping list
- 2 TB chopped green onion ( 3 or 4 is good ) shopping list
- 1 TB lemon juice shopping list
- 2 tsp FRESH chopped dill OR 1/2 tsp dried dill weed shopping list
- 1/2 tsp Tobasco or other hot pepper sauce shopping list
How to make it
- Set cream cheese out to soften
- Peel, seed and dice the cucumbers
- Chop the onions and dill ( if using fresh dill )
- In a food processor, beat the cream cheese until smooth and creamy
- Add mayonnaise and process on low until blended
- Remove from food processor, place in a bowl and add remaining ingredients
- Chill for at least 2 hours to blend flavors
- Serve with crackers or a veggie tray - yields about 2 1/2 cups dip

So good! I tried it with all mayo, all sour cream and a mix of both. The family liked all mayo and I liked it half mayo and sour cream. I can see the all sour cream version working as a great dip for potato chips. I enjoyed this on Rye crisps and as ...more
