How to make it

  • Set cream cheese out to soften
  • Peel, seed and dice the cucumbers
  • Chop the onions and dill ( if using fresh dill )
  • In a food processor, beat the cream cheese until smooth and creamy
  • Add mayonnaise and process on low until blended
  • Remove from food processor, place in a bowl and add remaining ingredients
  • Chill for at least 2 hours to blend flavors
  • Serve with crackers or a veggie tray - yields about 2 1/2 cups dip

    So good! I tried it with all mayo, all sour cream and a mix of both. The family liked all mayo and I liked it half mayo and sour cream. I can see the all sour cream version working as a great dip for potato chips. I enjoyed this on Rye crisps and as a dip with fresh veggies. This would also be great with seafood like smoked salmon, crab, shrimp or tuna either mixed into the dip or as a topping. Instead of crackers I think it would be great on toasted bagels, crustini or blini, or used as a dip with pita crisps or bagel chips.
