Slow Cooker Bean and Bacon soup

    As Michelle has mentioned about this recipe previously, I too grew up on Campbell's Bean with Bacon soup and I adore it. It's a total comfort food for me. And this recipe is actually better than the can (and I loved the canned soup). Of course it's healthier as well and certainly has way less sodium.

    Slow Cooker Bean And Bacon Soup/saved
    the night before last. Forgot to soak my navy beans initially, so had to postpone, and then when I was putting the ingredients together I accidentally added two cups of carrots and two cups of celery as opposed to one cup each. Mowed on.

    I used 2/3 pkg. of real bacon bits as opposed to the bacon slices, just because I didn't have bacon on hand. I added four envelopes of chicken bouillion powder to the water. One of these times I think I'll just sub chicken broth for the water. Because I added the extra two cups of veggies I did add an extra 1/2 cup of water to the crock pot. I added an extra tsp. of liquid smoke as I love that flavour coming through. I cooked the soup on low in the slow cooker for 10 hours and it was perfect. I take an immersion blender once it's cooked and puree the soup a fair amount. Just prefer that consistency.

    I have reviewed this recipe once before, but think I just did it on the old 'Soup Thread'. I guess it was so long ago that my review has fallen off the page.

    Yay Janet, glad we got a review in here for this soup, it's so good!! I need to make it again, and soon :) I don't think adding an extra cup of carrots and celery were a bad thing, probably made it even better! An extra tsp. of liquid smoke is probably the way to go too, I read back on my review in the soup thread and I had mentioned not really tasting the "smokiness". Thanks for the reminder of the recipe!!!

    Thanks Bakerme. We renoed our kitchen four years ago. Can you tell brown is my favourite colour? :)

LOL I know that we will be doing our kitchen someday and I had been checking out countertops and backsplash just to see what was out there. I was thinking of either the brown or blue in that exact tile. Boy does it look good.

    Cooler than my countertop and backsplash....do you see that tin in the background with the copper lid? My Dad ordered a set of cannisters, including that one, when he was a young man and first moved out of the house. He collected labels from Carnation Evaporated milk, sent them in, and received the cannister set as a 'prize'. I cherish them. Don't have the whole set anymore, but....
