Slow Cooker Beef Stew

    I've never really followed a recipe for stew, but when I saw this one I chuckled as it's exactly how I make my "dump n go" slow cooker stew! The only thing I do differently is double the beef broth as I like it a little more "soupy" to soak up a bun or biscuit etc.
    I use to always brown the meat and onions first, then one day I made it this way and for some reason it turned out to be the best stew I made up to that point. (I think I might have used chuck roast and steak seasoning spice that time) So I thought, hey...maybe I don't always have to brown the meat first! ;)
    I used my homemade broth that has a little soya sauce added to it; so it has a lot more of the umani flavors that you might miss from browning the meat first. But even with regular broth you can't go wrong with this method if you want less prep-time and easier clean-up!
    My slow cooker's Low setting run's like High, so I only cooked it on low for 6 hours. I do like to add a handful of frozen peas at the end of cook time, but I didn't have any this time around. I served it with cheddar-thyme biscuit's. :)

    Oooo, that looks good, Cosmicmom! Very similar to my tried and true slow cooker stew, so I know it tasted good ;) With temps cooling off a bit, I'm on the hunt for some nice chuck roasts to throw in the freezer to make this and other cold weather favorites.

This one looks great, and I bet sweet potatoes would be great in place of the white potatoes, if I wanted to sub :) What recipe for cheddar-thyme biscuits did you use? One that uses Bisquick? They look good :-D

    Michelle, I use the recipe that came with my Kitchen-aid stand mixer for biscuits. Then I just add a handful of cheese and some fresh or dried thyme ( or sometimes chives and garlic..) It's the same as this one but without the cream of tartar and sugar. I bake it at 450f for 9-10 minutes. Cheddar Thyme Flaky Biscuits I was in a hurry this time and cut the biscuits in triangles like scones instead of rolling it out and using biscuit cutters. It turned out perfect for dunking :)

    Mommyluvs2cook, when I make a stovetop beef stew recipe I have, I use half white potatoes for my husband and half sweet potatoes for me and it's delicious! Even my husband likes the sweet taters in there. I'm not sure if they take as long to cook as white in a crockpot, so you'd have to see if anybody knows or just try it and see!

I used sweet potatoes AND white potatoes as Bakerme suggested and it worked out great, everything was tender and flavorful :) I guess the one flaw for me, and I think it's more preference is it seems anytime I put raw onions for a soup or stew into the crockpot, it makes the broth taste pretty onion-y at the end of cooking, but to my surprise the kids did not complain, so it worked out :) Usually though I saute them off first, garlic as well if a recipe has it. I really wish I would have made some bread or rolls to go with this, but I ran out of time : Kids just had plain bread and butter though, and were happy with it :-)
