Smoky Roasted Chicken

    *Made for the January 2021 "Healthy" Recipe Challenge*

    Just as good as I remember it being the first time I made it :) My favorite thing about this recipe is how dark and crispy the skin gets. Yes, I know that eating the skin is not the "healthiest" thing ever, but I can think of a lot worse foods! I went ahead and put the rest of my unused lemon inside the bird and of course I put the spread under the skin as well as on top. I love the picture collection and I added one more to the mix :) Going to use this on thighs next time!

    I love the sound of the rub, simple and easy but it must pack a punch! I like that you used the lemon inside the cavity. :)
    I think chicken skin gets a bad rap! It's high in collagen which is so good for you, as well as some healthy fats...So eating a little bit of it here and there can't be so terrible! Like you said, there are worse things out there to munch on! ;)
