How to make it

  • Preheat oven to 325°F. Rinse the chicken off with cold water. Pat dry thoroughly with paper towels (otherwise the paste won't stick).
  • Mix together the paprika, honey, lemon juice, butter, garlic salt, and pepper. Spread over the entire surface of the chicken and place on a shallow baking pan.
  • Bake at 325°F for approximately 1 hour and 15 minutes. You may need to adjust the time depending on how big your chicken is. The chicken is done when the juices run clear (not pink) when a knife tip is inserted into both the chicken breast and thigh, about 165-170°F for the breast and 180-185°F for the thigh
  • Let the chicken rest for 10 minutes.

    I had this saved for a long time but I hardly ever cook a whole chicken just for myself but then I realized this doesn't have to be used on a whole chicken! I cut the recipe in half and put it on three pieces of chicken I had. This was so good! It smelled wonderful while it cooked. I loved the smokey taste with the bit of honey after. Fabulous. Added some pictures, too! A bit more here

    Have to drive to the big city to get the smoked paprika. I know this hick town doesn't have any. It's a 60 mile round trip. Don't think I'm ready to pay that kind of price in gas for the red powder. Will try to keep it in the back of my head for when I can combine trips.

    Cool, I have one more organic chicken in the fridge to make. Sounds like a plan. (Costco also sells a Kirkland brand smoked paprika now)

    This was SOOO GOOD! The only thing I did different was to add a little more salt. It smelled great while it was roasting, so I knew it would taste scrumptious. I removed the skin from the entire chicken. Then I smothered the chicken in the delicious paste made from all the spices in this recipe. I can't wait to make chicken salad out of the leftovers. :)

    Penzey's carries a smoked paprika. Also some Publix and SweetBay Markets are starting to carry it.
