Strawberry Arugula Spring Salad

    *Made for the March 2020 "Spring" Recipe Challenge"

    So I know recipes are going to get harder to make to a "T" because it's kind of difficult to get to a grocery store with all that's going on. I'm thinking let's just have fun with it and if we need to "tweak" recipes to what you have on hand, go ahead and don't feel bad about it!

    I loved this light and refreshing salad. The dressing is to-die-for. It's quite tangy, but the sugar (which I used coconut sugar) helps mellow it. I didn't have pecans so I used walnuts. Also no grapeseed oil so I went with light olive oil. I could eat this everyday :)

    Good call to tweak recipes to what we have on hand during this pandemic, Michelle. With my asthma and MS med's I won't be leaving the house for some time. (I finally got my online grocery order though!) All major health org's are saying those with asthma or who've had pneumonia before are quite susceptible no matter your age. Stay safe everyone!!

    Thanks ladies! Lol Shona, I forgot to say that I used feta instead of goats cheese. As much as I want to like goats cheese, I don't :/

    Lol, good to know the feta works! I like one brand of goats cheese but can't get it here, it's made on Vancouver Island.(Coombs market near my old home, where the goats live on the grass roof of the building and the cheese was made daily) The supermarket stuff doesn't compare! ;)

    Chevre is cheese from goat. Feta is cheese from sheep. I never knew the difference. Always thought they were the same.
