Sweet Chicken Salad

    Made for May 2018's "Salad" recipe challenge

    Moms Age Old Always Good Sweet Chicken Salad by Krumkake

    I love Old-timey recipes, and I've never seen one like this! It's like chicken salad meets devilled egg mixed up with a pasta salad! Though definitely more of a chicken salad.
    The only thing I wasn't sure about was the sweet part of the dressing. So I only used half the amount (1 Tbs of sugar) and found it plenty sweet for me.
    I also went out and bought the Miracle Whip for this. I don't think I've ever bought it before! My mom used it growing up, but since living on my own I've never used it. It adds a nice tanginess to this recipe. :)
    The only problem I had was with the macaroni rings, which is my fault and not the recipes! I've never cooked small pasta on it's own (only in soups) and I think I boiled them too hard and they fell apart! Only a few rings stayed intact! Ooops, now I know to gently simmer them next time, lol ;)
    Since this has pasta in it I served it over a salad. Though, I think you could leave the pasta out all together and still have a great chicken salad sandwich.
    This makes a huge amount, roughly 6-7 cups of salad. It would be great to eat for lunches all week. But if you're only feeding one or two people I would half the recipe.
    The only thing I would add next time is some green onion for flavour and colour. :)

    Hmmmm.....I was thinking the same thing as you CosmicMother: It could use some color. I too was thinking green onions or chives, but after reading the recipe I see purple grapes is an option. Glad you like the recipe.

    I'm eating this right now over a bed of baby spring greens and I prefer that over the iceberg lettuce. I wish I waited and took a picture of it today--much nicer over the dark green and purple leaves! ;)

    Your picture is lovely! I guess the first time I saw it the blinds on the window by my desk were open and I didn't see any nuances of color in the actual salad. I can see them now. I still like the green onions or chives idea though!

    I'm thinking the grapes AND green onions would be good in this! I'd have to use regular mayo, miracle whip is probably the one thing I refuse to eat, too many bad memories lol. I do love your picture though, I bet it was great over the lettuce!!
