Toasted Orzo Chicken Soup

    *Made for the January 2018 Pasta/Rice Recipe Challenge*

    Exactly the soup I was looking for! I used a heaping cup of orzo and added about 2 more cups of chicken broth. I have never toasted orzo before cooking it, and it really does add a nice "nutty" flavor to it. Pleclare mentions to add the "garlic" in her directions, but it's not in the ingredient list. I figured it was just a typo so I added in about 3 cloves of chopped garlic to the sauteing vegetables. So good and can't wait to have the leftovers for lunch today!!

    I'm not a fan of orzo but your photo is so tempting that I might have to try it with another mini pasta variety or rice! :D

    Shona I think rice would be a great substitute as well as any small pasta like ditalini!
