Turkey Enchiladas Verde

    Yesterday was 'Blue Monday'. Based on no scientific fact 'they' say that the third Monday in January is one of the most depressing days of the year. Mainly due to the weather (at least here in Canada) :). To offset those blues I decided to make a Mexican meal last night and served Nacho chips with store bought Mexican Layer dip as an appy, and then for the entree
    Turkey Enchilladas Verde
    My hubby made a batch of his famous Margueritas to quaff. :) And the meal was complete.
    I have made this recipe a lot over the years. For some reason I guess I never did do a IMI review so here it is now. :)
    I buy lovely fresh Tortillas at a favourite Texan restaurant 'The Lonestar' close by. This batch I just used old cheddar but sometimes I do buy that Mexican cheese blend mix. The tomatoes and green onions add a nice freshness to the meal and this time I had some Guacamole on hand so used that as well. It's a great way to use up leftover chicken or turkey, and it's a super easy meal to put together.
    Best of all, it tastes awesome!

    We love enchiladas, so I know this would go over well at our house :) Never have had turkey enchiladas though, they look wonderful!!

    Nice photo, Chuckieb! This is something I would like, especially with good corn tortillas. It's so hard to find them in the stores. My hubby prefers flour so I rarely get corn. That's interesting about blue Monday. Monday is my favorite day of the week (call me crazy) and I woke up with the Monday morning blues and did nothing all day. It was gloomy and overcast so I thought that may have had something to do with it.
