Avocado & Feta Omelet

    Loved the flavors of this omelet! So usually when I make omelets I flip them, even though most don't say to. I can't deal with the fact that you cook it on one side then add filling onto raw egg whites then fold over, and the raw egg whites are still there. How do restaurants get them cooked? This time I decided not to follow my instinct and just let it cook on one side until it FINALLY cooked all the egg whites all the way through. Now you see my result, a dark bottom. Just going to stick with my flipping method lol. Taste great though and do not add any extra salt, the feta is enough!

    Sometimes your own instincts work better than the "expert's" advice. It's still a yummy looking photo. You know how I feel about feta ;) Unfortunately, avocado is another thing I can't seem to develop a taste for.

As the edges start to cook, carefully lift it with a spatula and tilt the skillet so the uncooked eggs can run to the bottom. It's o.k. to add the filling before the eggs are completely set because it will continue to cook. One thing I do at home that they don't do in the restaurants is cover the pan with a lid after I add the filling. I think it helps circulate heat and cook the top faster. Even doing all of that, mine still have a slightly golden brown bottom. I think I just need to cook at a higher heat. I've been to a breakfast buffet where they make them in front of you and it only takes 2 or 3 minutes tops and everything is hot all the way through.

I've watched people make them and just thought it looked too difficult so I've never bothered! I prefer poached eggs anyway. :)
