    Baked Garlic Parmesan Chicken

    This recipe really appealed to me because of using olive oil instead of butter. It made a delicious meal with a baked potato and Greek salad. I already have plans for the leftovers, too. Found a great sounding dipping sauce here at GR that I want to try.

    I did do the prep work on the chicken in a different way than in the recipe instructions. I first arranged the cleaned trimmed chicken (seasoned with s&p) in the baking dish and then drizzled with the garlic flavored olive oil (I used garlic powder instead of minced). I used my hands to make sure the chicken was well coated, then dredged it in the crumb mixture and returned to the baking dish. I covered the dish with foil and baked for about 30 minutes, then uncovered and baked for about 10 minutes longer. The chicken was exceptionally moist and juicy.

    Thanks, I'm glad you liked the pic. It's cooler here and we've actually had some rain so some of my herbs are starting to grow again. I was able to find some nice young oregano for the garnish to add a little color...

    Wow, that looks so good! Did you use six breasts halves like the recipe says? Was one tablespoon of oil enough? Pleclare sure does have a lot of yummy chicken recipes.

    I only used three - so I cut all of the other ingredients in half but probably used the full tablespoon of oil. But honestly, I didn't measure, just eyeballed the amount that I thought was needed. ;)

    Thank you, Frankieanne! Just realized that I probably should have noted that I used seasoned dry bread crumbs. If you use plain crumbs, I think you probably will want to add more dry herb seasonings.
