Barley and Lentil Soup

    This is a quick and easy recipe! It tasted much better once I added an extra 3 tsp. of salt and topped my bowl with 2 Tbls grated parmesan cheese! This is the kind of soup that tastes better the next day! Its a very good recipe though! I served it with Juels' Parmesan Thins! Perfect with this soup!

    I don't remember having seasoning problems. Mine came out a little spicy because I doubled on the amount of cumin and added fresh garlic in the end. I also used canned chicken broth, I think, which had plenty of salt. But it was easy and tasted really good.

    Oh, I used veg broth! Maybe that made it sweet? It was Emeril's Organic veg stock.

    I never keep vegetable stock at home. We are such a meat eating family, I use chicken broth wherever it calls for vegetable one all the time! LOL.

    It was a very good recipe before but now its just amazing! It also thickened up quite a bit... which is how I like it!
