    Basil Cream Chicken With Fettucini

    Another recipe that came out well with my screw-ups.

    Didn't have the 'shrooms so subsituted a bell pepper. Turned around one too many times and the roux got too brown so the sauce didn't thicken up as well as it should. Added some corn starch to compensate.

    Mother likes Vermicelli so I used that instead of Fettucini.

    The sauce (gravy) seems to be along the lines of an Alfredo sauce so I added parmesan and peppered Monterray Jack and Mozzarella to help thicken up the sauce and make it a more true Alfredo sauce.

    Sauteed the peppers and onions first to wilt them well before adding the cubed chicken. That wasn't a screw-up. I don't like raw tasting veggies and at 4 minutes, by the recipe, that is what I would have ended up with. Did 6 minutes on the chicken. Used 3 large breasts which is about 2 lbs.

    All in all a good pasta dish. You might like a little more s&p. I added salt to the veggies and chicken as they sauteed. That comes from watching too many cooking shows.

    Finally couldn't pass up the opportunity to add some garlic to the saute.
