Black Bean Enchiladas
Another one I bookmarked when it was posted.
Cleaned out the cupboards and refrigerator today. An "extra" can of enchilada sauce and another of black beans. Leftover Mexican rice from yesterday's lunch, an odd shaped chunk of cheddar and some flour tortillas. This was perfect for using those ingredients up! I cut this in half and it will last me the rest of the weekend. Delicious!

Great find, Frankieanne! I love cleaning out cabinets. It's surprising what kind of fun foods and recipes you can come up with. I just made black beans yesterday. This would be a perfect way to use up the leftovers.
