    Good flavor.
    I ran into two problems.
    Destructions doesn't say when to add the eggs but I figured it out.:)
    Had to increase the cook time to 4 minutes on the first side so the cake would be strong enough to flip. Think it's because of the lack of flour in this recipe. Only a half cup flour is not enough for good structure and it lets most all the bubbles from the baking powder and soda to escape. So these cakes are not as fluffy as they could be. They actually deflate when flipped.
    I used a quarter cup of Pleclare's blueberry jam and made purple pancakes.
    Served with peach honey and maple syrup. Got my sweet tooth charged up today.
    Think I would add another half cup of flour next time to help trap more air.

    It is the sugar water used to simmer the peaches in to kill any bacteria before canning them and the peach peels boiled to extract more flavor added to the sugar water. Then it is boiled down to the consistency of honey and canned just as the peaches were.
    It is a way to use everything in the canning process.
    Simmering the peaches pulls out a lot of peach flavor and the reddish coloring that is on the peach adjacent to the (removed) stone which gives the honey a wonderful burgundy color.
    I use 6c sugar to 12c water to simmer process half a bushel of peaches in batches for a total simmer time of 20 to 30 minutes. The sugar water peach residue, after canning the peaches simmers down to 3 to 4 cups of peach honey.
    It can be used, like I did, on pancakes, or spread it on some toast, or use it just as you would honey. Spread some on a hot buttered biscuit. Use it in recipes as you would honey, although it probably (well, most definitely) isn't as healthy as bee honey.
