    Bread Machine Italian Herb Bread 11

    Converted recipe to a hand kneaded loaf. Used active dry yeast in the amount of 2 1/2 teaspoons, or 1 package, instead of 2 1/2 Tablespoons as the recipe directs.

    Bread smells very good from the Italian spices. Has a soft interior and good grain. But where did the taste go. It has a bland flavor for smelling so good.

    It has out of control oven spring (see picture). I suspect it is from the lack of salt.

    Rose to over double the size in less than 1 hour on first rise. Rose to doubled in half an hour for the second rise and really took off in the oven.

    Baked at 350 for 40 minutes.

    Yes, it looks like you used Tablespoons of yeast instead of teaspoons. :-D I'll use one package of rapid rise/bread yeast and let you know the results I get although I don't really like to make bread without adding some salt... I'll hold myself back though.

    I made this today in my machine using a rapid program as instructed. It didn't rise at all, although it seems done! I ate a piece and it was fine - better with butter as point pointed out. :) I think it would make great croutons. Added a picture.

    LOL! So you had the opposite problem that Points had!

    I've had the same problem from time to time with yeast breads...it happens to me when I forget to check the temperature of the water before adding it to the yeast. If its too warm or too cool it doesn't rise. But it still cooks up nicely.

    Usually, I have great results with my bread machine. I've used it countless times and have had this kind of thing happen only twice before. I happen to think if I had used the regular cycle instead of the rapid one it may have worked because it clearly has not risen.
