Caramelized Onion, Cauliflower, And Cheese Soup

    Delicious! I started this soup before I was really hungry so I wouldn't be tortured waiting on the onions ;) I used a potato masher and left it somewhat chunky. Used monterey jack for the cheese and only had 1/2 1/2 so I used that. Full of flavor and now I know that I like cauliflower in my soup ;0)

    I made this last night. This is the first time I have ever made a soup. This was delicious. I cut up the cauliflower in small pieces and left chunky. I also used a jack/cheddar blend of cheese. It made about 2 1/2 bowls. Oh, I also crumbled up some crispy bacon on top. Very good. Thanks for a great recipe GK

    Oh yeh. I posted a pic too. Yeh, ML2C. I dont have a whole lot of dishes under my belt that dont involve the BBQ. Little by little Im trying to change that : ) And the bacon did make a great addition. I had just a half piece for the second bowl, which after having the 1st with 1 1/2 pieces wasnt quite enough. I plan to make this again now that the cooler weather is here
