    I made this for hubby and didn’t personally try it, so I’m relying on his opinion. No surprise, he loved the pineapple! Overall, he liked it because it’s different and a change from the standard salad, but said it lacked flavor. The dressing, while tasty, is very watery and doesn’t coat as a dressing should. Instead, it collects in a large pool at the bottom.

    As the preparer, I would say the ratios are way off! Maybe this is not meant to be a traditional lettuce salad, but my instinct tells me otherwise. Four cups of lettuce isn’t very much for 4 servings, especially for a meal sized salad. Naturally, I improvised.

    Let me describe the photo: I used a huge 12 x 12" platter! Made a bed of lettuce using at least 6c. of romaine/spinach mix. Then layered with only half of the shrimp. I also cut the remainder of the ingredients in half or used just enough for a garnish. Couldn’t find a papaya, so I omitted. Lots of waste with the dressing. It makes approx. 1-1/2c , but DH only used about 1/4c. on the entire salad.

    It certainly looks very pretty but I don't think it is something I would try. The dressing looks interesting though! It may work with something else I would like - although I find dark sesame oil kinda overpowering. Pretty, pretty! :)

    The dressing sounds amazing, but yes I could see how it could be watery. I don't think I have ever even tasted papaya, but I do love all the ingredients. Once again, such a pretty photo!!

    Thank You, Frankieanne! Not my cup of tea either. Hubby is the one who enjoys unique salads. Especially ones that contain fruit or nuts. Me, I either want a taco salad or something with Ranch dressing. lol!
