    I made this the other night for a side to chicken. I had a ton of zukes that I need to start using up. I tripled the recipe. This is a quick, easy and great tasting recipe. Instead of broth I just tossed bullion into the rice cooker along with basil. I also fine shredded the carrots so they wouldnt need a lot of cook time. When the rice was finished I tossed it in a skillet with the carrots and zukes and a bit of olive oil and fried for about 5 minutes.
