How to make it

  • In a skillet, saute rice and basil in olive oil for one minute; then add chicken broth and bring to a boil.
  • Stir in the carrot.
  • Reduce heat; cover and simmer for 20 minutes.
  • Add zucchini slices and simmer another 5 minutes or until zucchini is tender.

    Good flavour and so easy. I added a dash of minced garlic for a minute before the broth which worked well for me - I'm a huge garlic fan. This will definitely be a good side dish recipe to have up my sleeve.
