    Just as the description says - a tasty and filling quick lunch. I used Uncle Ben's Fast & Natural Brown Rice and Italian seasoned tomatoes. I was tempted to stir the cheese into the rice/tomato mixture at first instead just leaving it on top, but it melted and ended up as ribbons of melty cheesy goodness through the rice. I had some already-crumbled bacon in the fridge that I cooked the other day, so added that on top.

    Without or without meat, and as a meal or a side to grilled meat, this is a keeper recipe for me!

    Thanks, you 2. Yes, I was pleasantly surprised at how flavorful this was even though there are so few ingredients. I eat a lot of white rice (especially basmati) but the flavor and texture of the brown rice works so well in this...
