Cheesy Rice And Tomatoes Recipe
This makes a quick and delicious lunch or a side dish. Add some diced, cooked chicken at the very end for a light dinner!

Ingredients
  • 1 can diced tomatoes (preferably garlic, basil, and oregano variety)
  • 6 oz. low sodium chicken broth (even better, use Better than Bouillion)
  • extra garlic and basil to taste
  • 1 cup quick cooking brown rice
  • 2 slices swiss cheese
  • 1 small handful of shredded cheddar

Directions
  1. Mix together the tomatoes and broth in a medium saucepan, add seasonings.
  2. Bring to a boil over medium high heat.
  3. Stir in the rice, top with cheeses.
  4. Cover, reduce heat to medium low, and simmer for 12-14 minutes.
  5. Stir in melted cheese and serve!
